3 bell peppers (A mix of colors is good)
1 medium red onion (optional)
1 Tbsp olive oil
1/4 tsp fresh ground black pepper (To taste)
1/4 tsp kosher salt (To taste)
Preheat grill to medium-high heat. Preheat grill basket over the flame as well.
Cut peppers and onion into strips or squares into a medium sized bowl with a lid. Be sure to separate onion layers.
Add olive oil, pepper, kosher salt. Cover and shake to coat.
Grill in the grill basket for 10-15 minutes, tossing or turning the vegetables times to get an even char on them.
